This is very normal behavior for a fish when first placed in an aquarium. To make it as stress free for your gramma as possible you should keep the lights off for about 24 hours. Also, when you approach the tank to try and find him, try to move slowly and to not get too close. Fast movement of a persons seemingly huge head (to the gram ma) almost pressed up against the glass while your eyes are darting back and forth as you try and locate him is more than enough to make any little fish want to stay hidden. He will adjust pretty quickly, especially when he starts feeling the pinch of hunger. They are one of the few fish that seem to have a personality and watching their movements and behavior thought the day is really interesting.

This is very normal, especially for a Royal Gramma. Give him a few days, and he should begin to come out more. Once they get adjusted to your feeding regiment, they become very bold. Most of the Grammas I see (including my own) are very plump, and love to eat. I would strongly caution against adding any more fish though, as both the Clown and the Gramma should really be kept in a larger tank (20-30 gallons minimum). Just keep a close eye on them, as aggression problems may develop as they mature.
